This sounds like a great idea!
I like the idea of the cut out decorations. a little effort and creativity goes a long way!
I was also going to suggest a projector playing either Dance of the Dead or Shaun of the Dead. Low, or no soundtrack. More to enhanch the theme than to sit and watch. A DVD of old monster movie trailers can do the same thing.
Most likely there's someone in the group or at the college into video - they could do a looping DVD of highlights from zombie movies. I wouldn't push the gore as much as the scare.
Decorate with colored lights and cheap distressed material.
