There are many way to do it but the easiest way I know is to 1) buy a rca stereo to stereo adapter 2) connect the rca cables to the adapter 3) plug the stereo adapter jack into the mic input of your computer, and record.
A lot of software programs can do it too! You simply just select the chapter and crop the area of the movie that you want recorded, and then export the clip as an MP3. VLC is a freeware program that does this really well.
But for me, it's just easier to record it directly from the DVD to Audacity from the 1st method above. Hope that helps!
