There are lots of different DIY fog chillers out there but my question is, in your opinion, which is better? A chiller made out of a "insulated cooler" or a chiller made from a "plastic container"? I was wondering if the cooler type chiller would keep the ice from melting longer than a single wall of plastic. Your thoughts?

It all depends on your average ambient air temperature too. If you're having cold temps, you'd have to be able to chill the fog below that temp to have the sinking effect.

I've had success using a simple landscaping drainage tube with a few bottles of frozen water loaded in them (spike with salt before freezing and they stay frozen longer, and less mess when they thaw out). BUT my air temp tends to be in the 70s during usage.
