First off, don't make Leota float if this is your first go-around. That's going to be a huge headache unless you can figure out the Disney World version that puts the projector inside the head. Otherwise, you've gotta ensure that the movement of the ball is precisely consistent and essentially motion track the face to the ball. Headaches.
Now, if you have GT interacting with another projection (ie: the bust), you'll have to have both projections perfectly synchronized to pull it off. OR you can put both projections on one video that spans the space of both of them. Like this: (SB=singing bust, GT= grandma taters)

Of course, this means lining up 2 head forms on the same video loop, which may not be too bad.
I think it would be easier to have her comment on the song than on the organ music, if that's what you're talking about, so yeah, I'd do her with the bust.
