Do you mean you want to really eat it, or is it just for looking at? If a prop is going to hold it, I'd probably make a shape out of tinfoil and cover it with paper mache, then paint it. You could drizzle on thick drapes of hot glue to mimic veins and give it more definition.
But if a real person is going to eat something that you want to look like a bloody heart, you could also try pieces of barbequed chicken, painted a bit with dark BBQ sauce & ketchup. Depending on the lighting, this could likely pass for a heart.
