    Me and my besties are going to do a whole lot of baking of the tasty spooky treats this year I have the basic Pillsbury and Tollhouse stuff, but I also want some recipes to make goodies from scratch. Any thoughts?

    Midnight Chocolate Cheesecake Cookie Cups

    1/4 cup (1/2 stick) butter, softened
    1/4 cup shortening
    1/2 cup sugar
    1 egg
    1/2 teaspoon vanilla extract
    1 cup all-purpose flour
    2 tablespoons Hershey’s Special Dark Cocoa or Hershey’s Cocoa
    1/2 teaspoon baking powder
    1/8 teaspoon salt
    Whipped topping or sweetened whipped cream
    42 Hershey’s Kisses Brand Special Dark Mildly Sweet Chocolates, unwrapped and divided

    Heat oven to 350°F. Paper or foil line 30 small (1-3/4 inch diameter) muffin cups.
    Beat butter and shortening in medium bowl until fluffy. Beat in sugar, egg and vanilla. Stir together flour, cocoa, baking powder and salt. Gradually blend into butter mixture, blending well.

    Drop rounded teaspoonful of dough into each prepared muffin cup. Using back of spoon, push dough up sides of muffin cup forming crater in cup. (If you are having difficulty with this step, refrigerate pans for about 10 minutes and then continue.) Prepare Chocolate Filling; evenly divide into muffin cups. (Cups will be very full.)

    Bake 15 minutes or until cheesecake is set. Cool completely in pan on wire rack. Cover; refrigerate until ready to serve. To serve, top each cheesecake cup with whipped topping rosette and chocolate piece. 30 dessert cups.

    Chocolate Filling: Beat 2 packages (3 oz. ea.) softened cream cheese and 1/4 cup sugar until well blended. Beat in 1 egg, 1 teaspoon vanilla and 1/8 teaspoon salt. Place 12 chocolates in small microwave-safe bowl. Microwave at Medium (50%) 15 seconds at a time, stirring after each heating, until chocolates are melted and smooth when stirred. Cool slightly, blend into cheesecake batter.
    Makes 30 dessert cups.



    Apple Pie Bars

    Pastry
    1 Egg, separated, reserve egg white
    1/2 cup milk
    2 1/2 cups all-purpose flour
    1 teaspoon salt
    1 cup cold Butter, cut into chunks
    Filling
    1 cup crushed corn flakes
    8 to 10 medium (8 cups) tart cooking apples, peeled, sliced
    1 cup sugar
    2 teaspoons ground cinnamon
    1/2 teaspoon ground nutmeg
    1 reserved egg white
    2 tablespoons sugar
    Glaze
    1 cup powdered sugar
    1/2 teaspoon vanilla
    1 to 2 tablespoons milk
    Directions

    Heat oven to 350°F. Beat egg yolk in small bowl. Add 1/2 cup milk; mix well. Set aside.

    Combine flour and salt in medium bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Stir in egg yolk mixture with fork until dough forms a ball. Divide dough in half.

    Roll out half of dough on lightly floured surface into 15x10-inch rectangle; place onto bottom of ungreased 15x10x1 inch jelly-roll pan. Sprinkle with corn flakes; top with apples.

    Combine 1 cup sugar, 1 1/2 teaspoons cinnamon and nutmeg in small bowl. Sprinkle over apples. Roll remaining half of dough into 15 1/2x10 1/2-inch rectangle; place over apples.

    Beat egg white with fork until foamy; brush over top crust. Combine remaining cinnamon and 2 tablespoons sugar in small bowl; sprinkle over crust. Bake for 45 to 60 minutes or until lightly browned.

    Combine powdered sugar, vanilla and enough milk for desired glazing consistency in small bowl. Drizzle over warm bars.

    Tips:
    If pastry dough does not form a ball easily, add up to 1 tablespoon additional milk, 1 teaspoon at a time.

    To easily transfer pastry to jelly-roll pan, fold pastry in half; fold in half again. Place folded corner at center of pan. Unfold pastry carefully.

    Top pastry should be rolled on lightly floured surface slightly larger than bottom pastry to allow pastry to cover filling easily.

    Check out Rachel Ray's website and look for the Pumpkin Whoopie Pies- they are FANTASTIC I make them each year (I make them half the size of a regular whoopie pie so people can sample everything and not fill up on one treat). If you can't find the recipe- I have it in writing and can type and post it here for anyone who wants it!

    I have found every year, cupcakes get neglected at my party. I think it's because of the size. I would try minis.

    Okay so this isn't really something to make from "scratch" but I repeatedly get asked to make this by everyone each Halloween so just thought I'd throw it out there....

    Candy Corn Bark
    16 Halloween Oreos, each broken into 4 pieces
    1.5 cups broken small pretzels
    1 pkg of white chocolate bark
    2 cups candy corn
    Peanut M&M's
    Halloween Sprinkles

    Line a pan with wax paper then spread out all the ingredients mixed together. Melt the white chocolate and pour over top of it all. I add the M&M's and sprinkles on top. Let it cool until firm then break into pieces and eat
