    Roasted Honey-Mint Chicken with Grilled Peaches

    HONEY - MINT ROAST CHICKEN

    1 roasting chicken, about 5 lb.
    Salt & freshly ground pepper
    1/2 tsp. paprika
    1/4 c. honey
    2 tbsp. lemon juice
    2 tbsp. butter
    2 tsp. mint jelly
    1 tsp. grated lemon peel

    Preheat oven to 350 degrees. Place chicken in large roasting pan, breast side up. Sprinkle cavity and skin with salt, pepper and paprika. Roast 1 hour.
    In a small saucepan, mix honey, lemon juice, butter, mint jelly and lemon peel. Heat, stirring until butter and jelly are melted. Brush chicken with honey mint glaze. Roast 30 minutes longer until chicken is tender.

    Grilled Peaches

    4 peaches sliced in half, pitted.

    Start up your grill on medium heat. Place peaches cut side down for about 2 minutes or until desired done-ness.

    No problemo. Maybe I ought to seriously think about writing and publishing my own cookbook. I always get requests for my recipes... I think I ought to put in a THICK section on Halloween related foods of course!!
