I learned last year that McCormicks makes a Neon Food Coloring. Could have used this last year when I did cupcakes and wanted something different for the icing. Couldn't find it last year in my local grocery stores but did this year. Here's a link to McCormick's site if you're interested:

If you click on the link under Show Your Team Colors they show how you can add color to beer, clear soda or dip. There's also some halloween recipes on the site using the neon coloring.
