I've always seen everyone toast seeds in the white casings, but is it possible to open them up and toast them so they would be like sunflower seeds??

Hmm, I always roast them in the shell. The shell is edible (I always eat it), but I think some people split it and just eat the seed. Not sure if you could split the shell while they're raw though.

I know that you can purchase them in most grocery stores already shelled--they're usually labeled Pepitas, but it is so much work to try to shell them yourself, that I recommend you leave the shells on. If you find that they are tough, you can always roast off any seed from any of the squash family. I find that the squash seeds like butternut, acorn, delicata, and kombocha have thinner skins and they get nice and crisp when you roast them.

I've never heard of that! I always eat the whole thing. Good roughage for your system!
I let mine marinade in a brine solution for a couple hours, then bake them. Oh I can't wait.

Hmmm... that would be a lot of work. I was just thinking that I never eat the pumpkin seeds because of the shells, (I am a spoiled picky eater) if it would be worth it to try them, but heck if they make them already shelled as.... pepitas? I will definately try looking for those instead! Thanks for all the feedback!
