Hi, The peanut eyeballs aren't so much a recipe as a way of making them... I have a mould of blood shot eyeballs that I got from the UK that I use. I take 1/2 teaspoon of peanut butter then roll them into balls and let chill in the fridge for a while to make them a bit harder. I melt chocolate (white to look like eyes) and half fill the mould then let it set up in fridge. Once the choclate has set a bit (not completly hard but so peanut butter doesnt sink through) I put the peanut butter ball in middle and cover to fill the mould with more chocolate then decorate with decorating gels for red viens. I suppose without the mould you could have larger peanut butter balls, set the same way then roll in chocolate like a truffle? Sorry I couldn't give a better answer.
