I use a number of thing really. I have a wood carving knife kit that I use most along with a metal baby spoon (without the rubber coating). Last year I got a Drimmel involved and that helped speed things up some but it does get messy so you have to use it outside.
Love your pumpkins! I also sculpt pumpkins... for the past 4 years, at least. It's very difficult and adds style to carving. I'm curious-- what tools do you use to sculpt yours? I've tried all sorts of different things, but I like using wood gouges the best because they can remove large chunks of pumpkin flesh for those deep areas.
