Hello!
I am making a small house-like structure (like the house in Hansel and Gretel) that has to surround/cover another structure, and I decided the easiest way would be to cover a plastic storage bin with foam board (foam core, like people use for science fair posters) to make the walls and roof. I'm worried about it sticking together though, I am wondering if anyone knows what type of glue would be best to use for this, for gluing plastic and foam core board together?

I would recommend using a combination of adhesive and fasteners like screws, you can't really rely on one without the other...

Liquid Nails Construction Adhesive should work.

I don't think screws will work on the thin foam core board I'm planning to use...

Gorilla Glue is the most awesome stuff ever made! I've used it to glue wood to foam, metal to foam, plastic to foam, and foam to foam. Follow the directions on the bottle and you'll have no worries.

Gorilla Glue would be my suggestion as well. Make sure you follow the directions and lightly wet the foam and the plastic bin to ensure a strong bond. It will expand, so make sure you can weigh down the foam board while drying. Otherwise, you'll be doing a lot of repair work before you've even really started the project.
