Is there a way you can add a dimmer switch in between the low and high speed to have a more adjustable speed?

Nope. You need a PWM switching circuit. Adding an AC rheostat will only work on the power supply end of it. That will will cripple your power supply and reduce current thus reducing any usable torque on the motor. There are motor speed kits available on line or you can get the "Pace Maker" motor controller from Halloween Prop Building Supplies For The Home Haunter - Monster Guts. You might try a 12 Volt POT (which is NOT a dimmer switch for AC lighting) and see what it does, but whenever you reduce voltage, you reduce AVAILABLE current from you power supply.

I agree, reducing power would lose torque from the moter. The motor itself has built-in slower speeds. I use the slowest poosible one.
Try incorporate a gear mechanism to reduce speed and maintain torque. I haven't tried it, but a garage door opener has a geared setup that may be modified with a gear mounted on the motor instead of the arm.

I think I'm going to do the PWM speed controller. Way cheaper than the monster guts pace maker. I want to have a more than just slow or fast or go the route of making gears etc. The PWM seems to be the simplest and fastest route.
