For my haunt this year I'm having an actor chop off a monster's head. (Sorry--sounds nasty but you actually won't see it as it's mostly sound and lighting effects.)
As for the visual-- I have two of the same masks so when the monster is slain, our hero will hold up the mask (head) that the moster is not wearing and the scene will be over. Geez-- this sounds wrong. Ha Ha! I'd like it to look like it's a real head but all I have is a plastic head to insert inside the mask. No idea what would make realistic guts hanging down from the neck itself. Since this scene will be done over and over again, it can't be messy. (Drippy Blood, spagetti, etc.)
Any suggestions on what makes good fake guts for something like this that'll take some actor abuse?

Great Stuff spray foam insulation, and red paint.

Oh yeah! It's super sticky when it's wet, and when it dries, it forms a hard skin. It's awesome!!!

Great stuff works great for guts this is what mine turned out like:
