I used one of those little air vent motors. Here's a link to a post that shows the mechanism.

For the price and ease of working with, they are great little motors. It didn't have quite enough torque to lift the finished arm, hand and knife assembly due to the weight, so I added a counter weight to a string attached to the shoulder pivot. At the arm goes down (by gravity), it lifts the weight. When the motor lifts the arm assembly, the weight goes down, pulling the arm up, helping the motor.
I used the same mechanism to make Dracula dring a beer in my Dracula's Pub set up.Doc Doom
