After seeing some great ideas here, I decided to take the plunge and start making my own props. Since I LOVE zombies, I started there.
My first try used wood for the backbone, and then rolled paper everywhere else, and although he looks good, his arms just won't hold their position very well, so PVC was the frame for this second attempt.
Basically, a PVC frame with some newspaper rolls for ribs, and some newspaper filler, then covered paper mache-style using latex carpet adhesive -- which I'm having GREAT FUN sculpting into sinews and such.
Covering is about half-way done, and I'm going to do more "fleshing out" of the skull, but I think I'm making progress...

Man, that looks GREAT. Can't wait to see the finished product.
They live. They die. They return. Zombies.

How the heck do you guys do these things!! I want one!! This would be awesome in front of a tombstone, especially if you could animate it's head/mouth, eyes, etc! Is there some info out there that shows how to get started?

That's exactly the plan... he's going in front of a tombstone alongside the walkway, with the chilled fog rolling around it. I won't animate him, but I think I'll venture into that for next year -- I'm having so much FUN doing these!
As far as a step-by-step, my wife shot photos of the process, which are on my facebook at:

You're right Ed...
If anybody buried me in that shirt I'd claw my way out and haunt them relentlessly....
