I'm thinking of changing our haunt to a voodoo/canniblism theme.
I'm hoping to make a prop for this soon. Any ideas to fulfill this theme?

You wanting just a prop, or a room ? We are doing one room of our haunt to be a voodoo/witchcraft room. We are going to have old looking books, scrolls, shunken heads, eyes, spiders, snakes in bottles.... and a crystal ball , I hope, that will talk !

The link below will take you to a site that has pictures of many types of voodoo dolls, traditions, and a Picture of Marie Laveau, New Orleans Voodoo Queen. When I visited her home there was a small alter with little symbolic offerings, which is a big part of voodoo practice. One of the things that puzzled me in New Orleans was why everybody was selling these little dried alligator heads. I finally learned that they are used in voodoo rituals. So I guess some of the props you might consider would be voodoo dolls, alligator heads. tarot cards, an alter, and lots of candles. Voodoo drumming (you can find recordings) and dancing could also be options. As far as I know, there is no connection between Voodoo and cannibalism. I do believe they killed chickens to offer as a meal to the host spirit they were asking to be present during the voodoo ceremony.

1. chicken in a cage. Vodoo people need fresh chickens readily available for sacrafices and such.
2. have a wooden bowl with bones in it.

I did a small cannibal scene for my Pirates display this past year. It was a corpsed blucky on a spit that turned with a rotisserie motor. We had details like shrunken heads on stakes, skulls, bones, and a bird cage (we had our African Grey parrot in the cage, but it got too cold for him at night) Fog and lighting helped complete the look. Do Voodoo and Cannibalism have any relation to eachother?
One thing you can do, with Mardi Gras Coming up is collect up a lot of beads....for some reason, Voodoo brings up visions of Chicken Feathers and beads...and wooden mixing bowls."I never drink....wine. Well maybe just this once!"

It really depends on what you mean by Voodoo, most classical imagery of Voodoo was actually concocted by the catholic church when it set out to undermine and discredit the native religions. then in much the same way Voodoo enthusiasts recreated Voodoo in the catholic imagery, and what we generally recognize as Voodoo is just Catholic propaganda.
Druidry is similar as well, modern druids are pretty much enacting out a fantasy 'documented' by a medieval eccentric, today we have druids who claim to be continuing an ancient Celtic religion, but in fact all evidence of this religion can be traced back to some delusional nutjob. (much like Scientology I guess)
