Thought we should start a discussion on recipes so when we fall into a rut we could help each other out. Let's be honest the diet is the hardest part of weight loss...most of us are emotional eaters...it's the way we were raised. So let's post some of your favorite healthy dishes!!
I'll start us off: Portabello Bake 2 large portabello caps w/ stems 2 cups brown rice cooked 1/4 cup each red and green pepper chopped 1/2 cup each onion and celery chopped 1 TBSP each minced garlic, dried parsley, dried basil 1/2 tsp. pepper 1 can vegetable broth Preheat oven to 350* Wash portabella caps and dry. Remove stems chop them & set aside. Spray caps lightly with cooking spray just enough to get a light coating that soaks into the cap and looks like it isn't there--should be dull not shiny. Place them cap side down on the oven rack. Bake for 8 minutes, remove and put in 9X9 baking dish.Over med. heat, spray skillet w/ cooking spray, add garlic and simmer till you smell garlic aroma add onion celery and peppers ...saute for about 5 min. add chopped mushroom stems, brown rice , half the broth, herbs and pepper , simmer for about 5-8 min. covered. Spoon rice over the portabellas in baking dish, pour in other half of broth, cover w/aluminum foil and bake 25 min.
