Just think Disney's Haunted Mansion. It's the exact thing I'm doing this year. Lots of terrific food, some jazzy music playing from an old tombstone radio, etc.

I think it wouldn't be complete without zombies/voodoo magic stuff. Maybe zombies could be your base for decor and props.

Hmm... a place near & dear to my heart For sure I'd suggest a voodoo room (Voodoo..bathroom??). Something Mardi Gras themed could be fun too--think dot room with blacklight, fluorescent colors, and masks. A cemetery area would be cool, although it would be hard to replicate a NO cemetery with the above-ground tombs and vault tombs

For ideas from "real" hauntings in New Orleans, check out these sites: http://www.hauntedhistorytours.com/ http://www.neworleansghosttour.com/

Oriental Trading has feather masks like the ones sold everywhere in NO, as well as tons o'beads: www.orientaltrading.com Search with "feather masks" or "mardi gras." These would make great party favors, and the masks could be worn by guests who didn't come in costume

Definitely find some zydeco and jazz to play, and voodoo chanting or singing would be cool too if you can find it

Maybe you could create a wall mural by covering a large wall in paper and creating the silhouette of new Orleans style cemetery in the distance.

I'm building a New Orleans style crypt for our graveyard this year... love the idea of a haunted New Orleans party theme!

If you've got some appropriate trees, maybe drape some jute or dyed cheesecloth in the trees to simulate spanish moss?

Zombies, voodoo and witch doctors. Maybe tarot card readings?

(I'm in your neck of the woods - DH and I went to NO for our 1st anniversary - Halloween in NO was freaking fantastic!)
