We bought several hay bales to use for our yard haunt and now everything is put away but this huge stack of left over hay bales.
Any ideas what to do with them or where to get rid of them?

They make some good mulch if you have a garden...

Advertise them on Craigslist for cheap. People use them in the winter to protect rose bushes, berry vines, etc. You might lose a little money on them, but they wouldn't go to waste, either.

There are other holidays besides Halloween? When did they start that?

At the very least, you can probably put them out with yard waste pickup- such as around fall/spring cleanup pickups. They won't go to waste even doing that.

If you put a tarp over them the rest of the year they should last till next Halloween.

You could always donate them to a riding stable.
