Hi guys. I've got a bunch of pumpkins ready to be carved but with my party not till Friday I'm not 100% sure when I should be carving them, obviously I want them to look their best for the party.
How many days before displaying do you carve your pumpkins?

We just got our pumpkins this past weekend. Being that Halloween falls on a Monday this year we'll probably carve them Saturday or Sunday.

We have done them about a week in advance. It only gets into the high 50's here so they stay pretty chilled. We also like that aged look and not so bright and shiney. This way they look like they have been that way for a while. Unfortunately, just last night hubby dropped the bomb on me and said he doesn't want to do ANY pumpkins this year! I couldn't believe it. I know it hurts the hands, a pain to pick out just the correct but, to me it's one of the icons of Halloween.

You can get away with carving a few days earlier if you wash them out with a bleach/water solution after carving. This inhibits bacteria growth and delays decomposition. They will also keep longer if you can refrigerate after carving. I used to do all of this when my kids were little and could not wait to carve their pumpkins. Now, I never carve more than a day or two before.

To echo what other have said: My practice has always been to carve the pumpkin(s) either the night before or day of Halloween, depending on how busy I am with other things.

Yeah, it's just that I really want them looking their best for the Friday which is my party but I'm going to have a lot to do (baking the sweet stuff on thurs to be iced on friday and making the food friday morning/afternoon). I suppose I could do them thursday after I've finished the baking. Hmmm.
